5 Quick And Easy Meals For Dinner

I try my very best every week to meal plan and more often than not I get overwhelmed. I can never think of enough dinners to make or I want to try that “Pinterest meal” and end up not having the energy to round up all the ingredients. Dinner doesn’t have to be complicated and sometimes the most simple meal can be the best.

1. The Burrito Bowl

This is by far one of our favorite go to meals and it is so easy! I always buy a rotisserie chicken to save time and shred about 2 cups. To be honest, I rarely measure anything and eyeball it. I grab a large serving bowl and begin with a layer of rice, then chicken, black beans, a touch of salsa and sour cream, lettuce, tomato and some shredded cheese. That’s it, your done! There is nothing fancy about it, but its so good!

2. Baked Salmon with Broccoli

Your going to ask if I really needed to tell the word to just throw some salmon in the oven, but yes I did!! Remember, I tend to overcomplicate dinner, but this is one of my husband’s favorite and it’s incredibly fast and easy. I  buy Trader Joe’s sockeye salmon. I let the salmon thaw, then pre- heat the oven to 350. On one side of the baking pan, I place the salmon and on the other side I place cut up broccoli. I sprinkle La Choy’s teriyaki sauce on the salmon with salt and pepper. I put olive oil, salt and pepper on the broccoli. I place it in the oven for 10 minutes and the meal is ready to go! I also line the pan with aluminum foil or parchment paper, which makes for a quick clean up. We have been cooking Trader Joe’s cauliflower rice with this meal and love it!

3. Roasted Red Pepper Sauce Over Spaghetti Squash

This has easily become my favorite meal lately. It’s so easy, to make, but it looks like you have put a lot of work into the meal. I also love that you can use this sauce over spaghetti squash, pasta, veggie spirals or our new favorite, Trader Joe’s brown and rice pasta. First things first, you will need ground turkey (or any meat to your liking) one jar of roasted red peppers, 1 cup of plain greek yogurt, and spinach. I brown the turkey or sausage in the bottom of a large pot until cooked. In another bowl, I use a hand blender (cannot LIVE without this one!) and blend the roasted red peppers. I add the roasted red peppers, a couple handfuls of spinach, and one cup of greek yogurt to the ground turkey. I sometimes add a splash of milk for a creamier texture. I then stir the ingredients together until the spinach has cooked and the sauce is hot. To finish, I pour either pasta or spaghetti sauce into the pot and mix it all together.

If you a wondering how to cook spaghetti squash, I normally cut slits into the squash and microwave it in 5 minute increments until fully cooked. Normally it takes around 10 to 15 minutes. 4. Lettuce Wrap Turkey Tacos

These are so yummy! I pretty much follow this recipe here, but I make my seasoning more simple. I normally cook the ground turkey, then add chili powder, onion powder, salt and pepper and whatever else I have on hand. I keep adding until I like the turkey has enough flavor. Scoop the turkey into your lettuce wraps and top of with your favorite taco toppings.

5. Black Beans and Rice

What could be more easy than black beans and rice? Plus there are so many things you can do to spice it up! Hunter and I love to add shrimp and tomatoes to ours. Simply make your white or brown rice according to the directions and then I warm the black beans in a pot. If I have bought unseasoned beans, I add chili powder, Old Bay Seasoning, little bit of onion powder, salt and pepper. Mix beans and rice together once the rice is fully cooked and your done!
